Shoyu Ramen: The Easy Way To A Healthy Broth

Hi everyone. We're gonna make a Shoyu ramen broth. This is a simple broth. We're gonna use four cups of chicken broth, and I'm using
organic chicken broth from Kirkland. And this is the one right here.
And it doesn't have too much sodium, which is nice.[00:01:00]
So basically that's one container. So four cups of chicken stock, and so that's low sodium, which is definitely recommended. Again, whether it's regular broth or bone broth, I prefer bone broth, two to four tablespoons of soy sauce. I'm gonna start off with two tablespoons. You can always add more to taste, but I'm trying to keep this, you know, relatively a lower sodium, Shoyu ramen broth.
We are going to then put in some Mirin.
this is basically cooking, rice, wine, Japanese cooking, and I'm gonna put in. A good dose of one tablespoon of Mirin.
We're gonna do one teaspoon of sesame oil.
I actually will put in a half a teaspoon 'cause this is pretty powerful stuff here. So a little goes a long way. [00:03:00] So I'm putting a half a teaspoon in. Because what you can do is add a little sesame oil to finish it off. Next up, we're gonna add aromatics, and this is gonna be garlic, ginger, green onions, and for extra umami, I'm gonna add shiitake mushrooms.
Okay, so I'm gonna turn it on to medium to high heat to get it to a boil,
and I'm going to add some aromatics. I'm gonna be adding green onions, garlic, and ginger. Okay, I'm gonna grate some ginger.[00:04:00]
Ginger is very aromatic.
All right,[00:05:00]
and I chopped up about two and a half, three cloves of garlic.
And now I'll add green onions. That's about four to five stalks of green onions chopped up.
Again, very aromatic, and we are going to bring it to a boil, then lower it and simmer it for about 15, 20 minutes so all the flavors can infuse.
And one more thing, I am going to add the shiitake [00:06:00] mushrooms.
These have a lot of umami and I also made them yesterday with some garlic, so it's gonna really be nice In addition to this broth
For some added color and I'll just throw in some carrots that I cut up. They go well. Add a little color.
Smells really [00:07:00] good.
It's starting to boil, so I'm gonna lower the heat and we're gonna simmer
for about 10 more minutes.
Okay. Coming along, and it smells really nice.
Definitely be a lot tastier than the packets bringing water to a boil. Gonna add some [00:08:00] noodles.
And these noodles cook up in about four minutes, so pretty quick.
Coming along about another minute or two.
Okay, we are now going to dish out our broth and it smells amazing![00:09:00]
And we're going to take our noodles.
And our noodles will be added to the bowl.

We are going to add a little more of the broth and we are going to add our egg, which I made yesterday
and finish it off with a piece of seaweed. And there you have it, some homemade Shoyu ramen. Enjoy!
